Crockpot Beef Short Ribs (set-it-and-forget-it)

These crockpot beef short ribs start with a quick sear, then melt into fork-tender perfection as they braise low-and-slow. I keep the broth on the lighter side and add red wine—or a splash of red wine or apple cider vinegar—for depth and brightness. Perfect over mashed potatoes or buttered noodles.
